A korean picnic: spicy cucumber salad

This week it’s time to spare more time in the nature and less on cumputer, so today it will be a quick post to give you the recipe of a deliciously tasty spicy cucumber salad we prepared together with Ju-hyun, the corean potter behind the Laon Pottery project. Remember the last post on a korean picnic?  I love this salad: it’s fresh, it’s perfect for summer and it matches with any oriental dish you will try: before some noodles, beside rice or a corean barbecue…In Korea this is the perfect side dish to take with you at a picnic…so we prepared together!


Ingredients for 2 picniquetters:
2 o 3  cucumbers*

half tbsp of salt
1 garlic clove minced 
1 small red onion sliced

2 tbsp of rice vinegar (or apple)

1 tbsp of brown sugar

2 tbsp of your fav soy sauce 

1 fresh hot red pepper

2 tbsp of sesame oil

1 tbsp of toasted sesame seeds


 1.Cut the cucumber in slices. To make it more “oriental”, when you cut put your knife 45º inclined, this will make the slices more extendend, then cut the slices to half and you will obtain the effect in my pictures.

2. Put the cucumbers sliced in a bowl with the salt and leave it for 5 minutes, then squeeze them a bit to let water out.

3 . Mix in another bowl sugar, garlic, onion, pepper, soy sauce, vinager and sesame oil, seeds and cucumbers. Leave it for ten minutes in the fridge to marinate a bit…or take it with you at the beach! 


*If you want to add more veggies try with carrots, radish, beets, courgettes sliced or a champignon carpaccio!
